The History and Evolution of Poke'
A style of food preparation with Hawaiian roots, poke' is a dish consisting of a diced — sometimes raw — protein with a base of rice and a marinade. Traditionally, it was fresh fish cut into small pieces, seasoned with sea salt and flavored with an oil, but poke' has since taken on a life of its own. Today, you'll find it made with many types of seafood or other proteins and a wide variety of mix-ins from diverse cultures.
